Passion fruit Poppyseed Cake

There will be a lot of birthdays to celebrate every month from September onwards. Homemade cakes always taste better than store bought ones. Since we were celebrating a friend's birthday at Quivo, Pavillion, I decided to bring a cake from home.

The recipe for this cake is from a few sources. The poppy seed cake is from Rachel Allen whilst the passionfruit curd from Nasi Lemak Lover and the cream cheese frosting from Feast magazine.

Orange and passionfruit curd (Nasi Lemak Lover)
Ingredients:-
2 large eggs
60g sugar
40ml orange juice
45g butter
35g passion fruit (pulp only not juice)

Method:-
Place the eggs, sugar and orange juice in a saucepan and cook over a pot of simmering water until thick.

Turn off heat. Add in butter and passionfruit pulp and stir till smooth. If curd is too thick, add some passionfruit juice little by little as you don't want curd to be too runny. Refrigerate curd to be used later.

Poppy Seed Cake (Rachel Allen)
(use a 7" cake pan for a higher cake)
Ingredients:-
115g butter, softened
100g caster sugar
3 eggs, beaten
100g AP flour (use SF flour)
1 teaspoon baking powder (reduced to 1/2 tsp)
45g poppy seeds (reduced to 15g and add 15g passionfruit pulp)

Method:-
With a paddle attachment, beat the butter and sugar until light and fluffly.

Add in eggs, one at a time and continue beating until well combined. Add in poppy seeds and passion fruit pulp.

Place flour and baking powder in a mixing bowl and stir. Sift mixture.

Add sifted flour mixture into batter and fold in gently.

Pour batter equally into two 7" pans. Bake in preheated oven for 30-45 mins at 170C or until skewer comes out clean.

Cream cheese frosting (Feast Magazine)
Ingredients:-
50g butter
160g icing sugar, sifted
250g cream cheese
1 tsp yellow food colouring

Method:-
Beat cream cheese, butter and icing sugar till well-combined.

Separate cream cheese into three bowls. The cream cheese in one bowl should be its original colour while the other two bowls should have a dark yellow and lighter yellow. and pour curd over cake.

Frost the top of the cake with the "white" cream cheese followed by the lighter yellow on the upper sides and darker yellow on the lower sides of the cake.

Chill before serving.

The combination of passion fruit and poppy seed is kinda seedy but it tastes good together.

It's such a bright sunny colour. Perfect for someone with a cheerful personality.

Beautiful birthday girl making a wish on her birthday. Coincidentally, she was wearing yellow. I think her birthday theme this year is bright and sunny. Can be a "bersih" theme too. Lol!

Kudos to the staffs at Quivo who sang wonderfully for her!

Taken at the restaurant, hence picture quality not so good.

Happy baking! xx
