No Bake Strawberry Cheesecake


I was thinking of what to bake for my dad's birthday and my mum randomly pulled out this  cut out recipe from an old Ikea catalog. 

This recipe is by a chef who earned a diploma in pastry arts from Le Cordon Bleu, Paris. So it must be good right?

This is the best cake to make if you don't have an oven or if you are worried about whether your cake would rise because it requires no baking at all!


Ingredients:
Base
300g digestives biscuits, grounded
140g butter, melted

Cake
500g cream cheese
20g gelatine powder
100g sugar
1/2 cup hot water
1/2 tsp vanilla essense
1 1/2 cup cold water

1 sachet strawberry flavoured Jello
1 punnet strawberries

Method:
Prepare a 8" spring form pan. I use a cake ring covered with tin foil at the bottom and placed over a bigger cake pan.


Crush digestive biscuits into fine crumbs using a blender. Place crumbs on cake pan and press in with melted butter. Refrigerate.

Mix the cream cheese, vanilla and sugar with an electric mixture till smooth.

In a separate bowl, sprinkle gelatine powder over hot water and mix well.

Add gelatine mixture to cream cheese and mix well. Pour cream cheese mixture into cake pan. Press strawberries into cream cheese. Chill in fridge for 3 hours.

Prepare Jello by mixing powder with cold water. Pour jello mixture over cream cheese and allow to set for at least 4 hours.

Remove cake from cake pan by running knife around the sides. Give it a little shake and it will pop right out.
